A delicious Keto Red Velvet Trifle featuring layers of moist red velvet cake and creamy mascarpone.

- 2 cups almond flour
- 1 cup erythritol (or preferred keto sweetener)
- 1 teaspoon baking powder
- 1 teaspoon unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened almond milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream
- 1/4 cup powdered erythritol
- 1 teaspoon vanilla extract
- Fresh raspberries or strawberries for garnish (optional)
Instructions
- Preheat the oven to 350°F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
- In a large bowl, combine almond flour, erythritol, baking powder, cocoa powder, and salt. Mix well.
- In another bowl, whisk together almond milk, eggs, vanilla extract, and red food coloring until smooth.
- Pour the wet ingredients into the dry ingredients and mix until fully combined.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- While the cake is cooling, prepare the mascarpone layer. In a mixing bowl, combine mascarpone cheese, heavy whipping cream, powdered erythritol, and vanilla extract. Beat with an electric mixer until soft peaks form.
- Once the cake is completely cool, cut it into small cubes.
- In a trifle dish or individual serving glasses, layer the cake cubes and mascarpone mixture. Repeat the layers until all ingredients are used, finishing with a layer of mascarpone on top.
- Chill the trifle in the refrigerator for at least 1 hour before serving. Garnish with fresh raspberries or strawberries if desired.
Notes
- For a chocolate version, add 1/4 cup unsweetened cocoa powder to the cake batter.
- To add a hint of flavor, mix in a teaspoon of almond extract to the mascarpone layer.
