Description

A delicious Keto Red Velvet Trifle featuring layers of moist red velvet cake and creamy mascarpone.


Ingredients

  • 2 cups almond flour
  • 1 cup erythritol (or preferred keto sweetener)
  • 1 teaspoon baking powder
  • 1 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened almond milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 8 ounces mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • Fresh raspberries or strawberries for garnish (optional)

Instructions

  1. Preheat the oven to 350°F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, combine almond flour, erythritol, baking powder, cocoa powder, and salt. Mix well.
  3. In another bowl, whisk together almond milk, eggs, vanilla extract, and red food coloring until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. While the cake is cooling, prepare the mascarpone layer. In a mixing bowl, combine mascarpone cheese, heavy whipping cream, powdered erythritol, and vanilla extract. Beat with an electric mixer until soft peaks form.
  8. Once the cake is completely cool, cut it into small cubes.
  9. In a trifle dish or individual serving glasses, layer the cake cubes and mascarpone mixture. Repeat the layers until all ingredients are used, finishing with a layer of mascarpone on top.
  10. Chill the trifle in the refrigerator for at least 1 hour before serving. Garnish with fresh raspberries or strawberries if desired.

Notes

  • For a chocolate version, add 1/4 cup unsweetened cocoa powder to the cake batter.
  • To add a hint of flavor, mix in a teaspoon of almond extract to the mascarpone layer.
