Ingredients

  • 1 ½ cups almond flour
  • ½ cup erythritol or preferred keto sweetener
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs
  • ½ cup unsweetened almond milk
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • Red food coloring (optional, to achieve desired color)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a doughnut pan with non-stick spray or coconut oil.
  2. In a large mixing bowl, combine almond flour, erythritol, cocoa powder, baking powder, baking soda, and salt. Whisk until well blended.
  3. In another bowl, whisk together the eggs, almond milk, melted coconut oil, vanilla extract, apple cider vinegar, and red food coloring if using.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Spoon the batter into the prepared doughnut pan, filling each cavity about ¾ full.
  6. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the doughnuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a cream cheese glaze, mix 4 oz of softened cream cheese with 2 tablespoons of erythritol and 1 tablespoon of almond milk until smooth. Drizzle over cooled doughnuts.
