- 1 ½ cups almond flour
- ½ cup erythritol or preferred keto sweetener
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 3 large eggs
- ½ cup unsweetened almond milk
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon apple cider vinegar
- Red food coloring (optional, to achieve desired color)
Instructions
- Preheat your oven to 350°F (175°C) and grease a doughnut pan with non-stick spray or coconut oil.
- In a large mixing bowl, combine almond flour, erythritol, cocoa powder, baking powder, baking soda, and salt. Whisk until well blended.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, vanilla extract, apple cider vinegar, and red food coloring if using.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Spoon the batter into the prepared doughnut pan, filling each cavity about ¾ full.
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- Allow the doughnuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a cream cheese glaze, mix 4 oz of softened cream cheese with 2 tablespoons of erythritol and 1 tablespoon of almond milk until smooth. Drizzle over cooled doughnuts.
- Add chopped nuts or sugar-free chocolate chips to the batter for added texture and flavor.
