- 2 cups almond flour
- 2 tablespoons coconut flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 large egg
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup baking soda
- 1 cup water
- For the cheese sauce:
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tablespoon cream cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well.
- In a microwave-safe bowl, combine mozzarella cheese and olive oil. Microwave for 30 seconds, stir, then microwave for another 30 seconds until melted and smooth.
- Add the melted cheese and egg to the dry ingredients and mix until a dough forms. If the dough is too sticky, you can add a little more almond flour.
- In a small pot, bring water to a boil and add baking soda.
- Divide the dough into small pieces and roll each piece into a bite-sized ball.
- Carefully drop each ball into the boiling water for about 30 seconds, then remove and place on the prepared baking sheet.
- Sprinkle garlic powder and onion powder over the pretzel bites.
- Bake in the preheated oven for 12-15 minutes or until golden brown.
- While the pretzel bites are baking, prepare the cheese sauce. In a small saucepan over low heat, combine cheddar cheese, heavy cream, cream cheese, garlic powder, and paprika. Stir until melted and smooth. Season with salt and pepper to taste.
- Once the pretzel bites are done, remove them from the oven and serve warm with the cheese sauce.
Notes
- For a spicy kick, add a pinch of cayenne pepper to the cheese sauce.
- Try using different types of cheese for the sauce, such as pepper jack or gouda, for varied flavors.
