  • 3 lbs whole chicken, cut into pieces
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup.
  2. In a large bowl, combine olive oil, paprika, garlic powder, onion powder, cumin, oregano, salt, black pepper, and cayenne pepper. Mix well to form a marinade.
  3. Add the chicken pieces to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. Place the marinated chicken pieces on the prepared baking sheet, skin side up. Bake in the preheated oven for 45-55 minutes, or until the chicken is cooked through and the skin is crispy.
  5. While the chicken is baking, prepare the green sauce. In a blender, combine lime juice, cilantro, mayonnaise, Dijon mustard, minced garlic, and a pinch of salt and pepper. Blend until smooth and creamy.
  6. Once the chicken is done, remove it from the oven and let it rest for 5-10 minutes before serving.
  7. Serve the chicken hot with the green sauce drizzled on top or on the side for dipping.
