- 3 lbs whole chicken, cut into pieces
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional for heat)
- 1/4 cup fresh lime juice
- 1/4 cup fresh cilantro, chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup.
- In a large bowl, combine olive oil, paprika, garlic powder, onion powder, cumin, oregano, salt, black pepper, and cayenne pepper. Mix well to form a marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
- Place the marinated chicken pieces on the prepared baking sheet, skin side up. Bake in the preheated oven for 45-55 minutes, or until the chicken is cooked through and the skin is crispy.
- While the chicken is baking, prepare the green sauce. In a blender, combine lime juice, cilantro, mayonnaise, Dijon mustard, minced garlic, and a pinch of salt and pepper. Blend until smooth and creamy.
- Once the chicken is done, remove it from the oven and let it rest for 5-10 minutes before serving.
- Serve the chicken hot with the green sauce drizzled on top or on the side for dipping.
Notes
- For extra flavor, add a teaspoon of smoked paprika to the marinade.
- You can grill the chicken instead of baking for a smoky flavor; just ensure it reaches an internal temperature of 165°F.
