- 1/2 cup unsweetened almond milk
- 1/2 cup pistachio paste
- 1/4 cup powdered erythritol or your favorite keto sweetener
- 1 teaspoon ground cardamom
- 1 teaspoon vanilla essence
- 1/4 teaspoon sea salt
- 1/4 cup chopped pistachios (for topping)
Instructions
- Pour the heavy cream and almond milk into a mixing bowl.
- Add the pistachio paste, erythritol, ground cardamom, vanilla essence, and sea salt.
- Blend these ingredients together using a hand mixer on medium speed until fluffy and soft peaks form (about 3-5 minutes).
- Gently incorporate half of the chopped pistachios into the mixture using a spatula.
- Transfer the mousse into individual serving cups or bowls.
- Refrigerate for at least one hour to firm up.
- Before serving, sprinkle the remaining chopped pistachios on top for garnish.
Notes
- For a more intense cardamom flavor, increase to 1.5 teaspoons.
