- 1 pound thinly sliced ribeye steak
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 1 medium green bell pepper, sliced
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 ounces cream cheese, softened
- 1 cup shredded provolone cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Worcestershire sauce
- 1 tablespoon chopped fresh parsley (optional)
- 1 package of low-carb tortillas (8–10 count)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the sliced onion and bell pepper, cooking until softened, about 5 minutes.
- Add the ribeye steak to the skillet, seasoning with garlic powder, salt, and pepper. Cook until the steak is browned and cooked through, about 5-7 minutes. Stir in Worcestershire sauce and remove from heat.
- In a mixing bowl, combine the softened cream cheese, provolone cheese, and mozzarella cheese until well blended.
- Lay a low-carb tortilla flat on a clean surface. Spoon a portion of the steak and vegetable mixture onto the tortilla, then add a generous dollop of the cheese mixture on top. Roll the tortilla tightly, enclosing the filling. Repeat with remaining tortillas and filling.
- Preheat your oven to 375°F. Place the rolled tortillas seam-side down on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the tortillas are golden and the cheese is bubbly.
- Remove from the oven and let cool for a few minutes. Slice each roll into bite-sized pieces and sprinkle with fresh parsley if desired.
Notes
- For added crunch, serve with pork rinds or cucumber slices on the side.
- To customize, try adding sautéed mushrooms or jalapeños to the filling for extra flavor.
