Description

Keto Persian Herb Frittata (Kuku Sabzi) is an irresistible dish packed with fresh herbs and flavors, perfect for any occasion.

Ingredients

Scale
  • 8 large eggs
  • 1 cup fresh parsley, finely chopped
  • 1 cup fresh cilantro, finely chopped
  • 1 cup fresh dill, finely chopped
  • 1/2 cup green onions, finely sliced
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie dish or an oven-safe skillet with olive oil.
  2. In a sizable bowl, crack the eggs and whisk them together with turmeric, baking powder, salt, and black pepper until smooth.
  3. Fold in the finely chopped parsley, cilantro, dill, and green onions, along with the walnuts if using, ensuring everything is well mixed.
  4. Heat the olive oil in your prepared skillet over medium heat, then pour in the egg and herb mixture, spreading it evenly.
  5. Cook on the stovetop for about 5 minutes, watching for the edges to begin setting.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the frittata is puffed up and golden on top.
  7. Remove from the oven and let it rest for a few minutes before slicing into wedges.
  8. Enjoy warm or at room temperature.

Notes

  • For an extra zing, consider adding a dash of red pepper flakes to the egg mixture.
  • Feel free to swap the herbs for your personal favorites, like basil or spinach, to create a unique flavor experience.
