- 1 cup almond flour
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese, softened
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar-free pizza sauce
- 1 cup sliced pepperoni
- 1/2 cup shredded mozzarella cheese (for topping)
- Fresh basil leaves (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a muffin tin with parchment paper or grease it with cooking spray.
- In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for 30 seconds, then stir. Repeat until the mixture is melted and smooth.
- In a mixing bowl, combine the almond flour, garlic powder, Italian seasoning, baking powder, and salt. Add the melted cheese mixture and the egg. Mix until a dough forms.
- On a clean surface, roll out the dough into a rectangle about 1/4 inch thick.
- Spread the sugar-free pizza sauce evenly over the dough, leaving a small border around the edges.
- Layer the sliced pepperoni evenly over the sauce, then sprinkle the additional shredded mozzarella cheese on top.
- Starting from one long edge, carefully roll the dough into a tight log. Slice the log into 1-inch pieces.
- Place each slice upright in the prepared muffin tin, creating a rose shape.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and the edges are golden brown.
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
Notes
- For a spicier kick, add sliced jalapeños or crushed red pepper flakes on top of the pepperoni.
