Ingredients

  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free pizza sauce
  • 1 cup sliced pepperoni
  • 1/2 cup shredded mozzarella cheese (for topping)
  • Fresh basil leaves (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with parchment paper or grease it with cooking spray.
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for 30 seconds, then stir. Repeat until the mixture is melted and smooth.
  3. In a mixing bowl, combine the almond flour, garlic powder, Italian seasoning, baking powder, and salt. Add the melted cheese mixture and the egg. Mix until a dough forms.
  4. On a clean surface, roll out the dough into a rectangle about 1/4 inch thick.
  5. Spread the sugar-free pizza sauce evenly over the dough, leaving a small border around the edges.
  6. Layer the sliced pepperoni evenly over the sauce, then sprinkle the additional shredded mozzarella cheese on top.
  7. Starting from one long edge, carefully roll the dough into a tight log. Slice the log into 1-inch pieces.
  8. Place each slice upright in the prepared muffin tin, creating a rose shape.
  9. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and the edges are golden brown.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired before serving.
