  • ½ cup unsweetened shredded coconut
  • ¼ cup granulated erythritol
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 (8-ounce) package cream cheese, softened
  • ½ cup sour cream
  • ½ cup granulated erythritol (for filling)
  • 2 large eggs
  • ½ cup passionfruit puree (fresh or canned)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F. Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, combine almond flour, shredded coconut, ¼ cup erythritol, melted butter, and vanilla extract. Mix until well combined. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
  3. Bake the crust in the preheated oven for 10-12 minutes or until lightly golden. Remove from the oven and let it cool slightly.
  4. In a large mixing bowl, beat the softened cream cheese until smooth. Add the sour cream and ½ cup erythritol, mixing until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the passionfruit puree and lemon juice until fully incorporated.
  5. Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake for an additional 25-30 minutes or until the center is set but still slightly jiggly.
  6. Remove from the oven and let it cool at room temperature for about 30 minutes. Transfer to the refrigerator and chill for at least 2 hours before slicing into bars.
