- 1 ½ cups almond flour
- ½ cup unsweetened shredded coconut
- ¼ cup granulated erythritol
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 (8-ounce) package cream cheese, softened
- ½ cup sour cream
- ½ cup granulated erythritol (for filling)
- 2 large eggs
- ½ cup passionfruit puree (fresh or canned)
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F. Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, combine almond flour, shredded coconut, ¼ cup erythritol, melted butter, and vanilla extract. Mix until well combined. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
- Bake the crust in the preheated oven for 10-12 minutes or until lightly golden. Remove from the oven and let it cool slightly.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add the sour cream and ½ cup erythritol, mixing until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the passionfruit puree and lemon juice until fully incorporated.
- Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake for an additional 25-30 minutes or until the center is set but still slightly jiggly.
- Remove from the oven and let it cool at room temperature for about 30 minutes. Transfer to the refrigerator and chill for at least 2 hours before slicing into bars.
