Ingredients

- 1 cup hazelnut flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar-free chocolate hazelnut spread
- 1/4 cup coconut oil, melted
- 1/4 cup powdered erythritol (or sweetener of choice)
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/4 cup chopped hazelnuts (for rolling)
Instructions
- In a mixing bowl, combine hazelnut flour, cocoa powder, powdered erythritol, and salt. Mix well to ensure there are no lumps.
- In a separate bowl, mix together the sugar-free chocolate hazelnut spread, melted coconut oil, and vanilla extract until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring until a thick dough forms. If the mixture is too dry, add a teaspoon of water or more melted coconut oil as needed.
- Refrigerate the dough for about 30 minutes to firm up.
- Once chilled, scoop out small portions of the dough and roll them into balls, about 1 inch in diameter.
- Roll each truffle in chopped hazelnuts to coat.
- Place the truffles on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.
Notes
- For a richer flavor, add a tablespoon of espresso powder to the dry ingredients.
- Try rolling the truffles in unsweetened shredded coconut or crushed almonds for a different texture.
