Delicious Keto Nutella Truffles that are perfect for satisfying your sweet tooth while staying low-carb.


Ingredients

  • 1 cup hazelnut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar-free chocolate hazelnut spread
  • 1/4 cup coconut oil, melted
  • 1/4 cup powdered erythritol (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup chopped hazelnuts (for rolling)

Instructions

  1. In a mixing bowl, combine hazelnut flour, cocoa powder, powdered erythritol, and salt. Mix well to ensure there are no lumps.
  2. In a separate bowl, mix together the sugar-free chocolate hazelnut spread, melted coconut oil, and vanilla extract until smooth.
  3. Gradually add the wet mixture to the dry ingredients, stirring until a thick dough forms. If the mixture is too dry, add a teaspoon of water or more melted coconut oil as needed.
  4. Refrigerate the dough for about 30 minutes to firm up.
  5. Once chilled, scoop out small portions of the dough and roll them into balls, about 1 inch in diameter.
  6. Roll each truffle in chopped hazelnuts to coat.
  7. Place the truffles on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.

Notes

  • For a richer flavor, add a tablespoon of espresso powder to the dry ingredients.
  • Try rolling the truffles in unsweetened shredded coconut or crushed almonds for a different texture.
