Description

Keto Mughlai Almond Korma is a creamy and flavorful dish made with soaked almonds, spices, and coconut milk, perfect for a low-carb diet.

Ingredients

Scale
  • 1 cup raw almonds, soaked in water for 4 hours
  • 1 medium onion, finely chopped
  • 2 tablespoons ghee or coconut oil
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Drain the soaked almonds and rinse them thoroughly.
  2. Blend the almonds with a splash of water until you achieve a creamy almond paste, then set it aside.
  3. In a large pan, melt the ghee or coconut oil over medium heat and toss in the cumin seeds, allowing them to pop and release their aroma.
  4. Add the finely chopped onion and sauté until it turns a rich golden brown, about 5-7 minutes.
  5. Incorporate the ginger-garlic paste and let it cook for an additional minute.
  6. Sprinkle in the coriander powder, garam masala, turmeric, red chili powder, and salt, stirring for 1-2 minutes.
  7. Gradually pour in the coconut milk, stirring continuously until it reaches a gentle simmer.
  8. Fold in the almond paste, ensuring it blends seamlessly into the sauce.
  9. Allow the korma to simmer on low heat for 10-15 minutes.
  10. Taste and adjust the seasoning as needed, then finish with a sprinkle of fresh cilantro before serving.

Notes

  • For an extra nutritional boost, consider adding a handful of spinach or kale during the simmering phase.
  • If you prefer a creamier texture, swap the coconut milk for heavy cream, but be mindful that this will increase the calorie content.
