- 2 cups almond flour
- 1 cup finely chopped pistachios
- 1/4 cup erythritol or your choice of keto-friendly sweetener
- 1/4 cup melted unsalted butter
- 1 teaspoon matcha powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup water
- 1/4 cup fresh lemon juice
- 1/4 cup erythritol (for the syrup)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish with melted butter.
- In a large bowl, mix together the almond flour, chopped pistachios, erythritol, matcha powder, ground cinnamon, and salt until well blended.
- Pour in the melted butter and vanilla extract, stirring until the mixture resembles a crumbly dough.
- Take half of this mixture and firmly press it into the bottom of the prepared baking dish to form a solid base.
- For the syrup, combine the water, lemon juice, and erythritol in a small saucepan, bringing it to a boil.
- Once boiling, lower the heat and let it simmer for about 5 minutes until it thickens slightly. Remove from heat and allow it to cool down.
- Spread the remaining mixture over the pressed base, ensuring it is evenly distributed and gently pressed down.
- Place the dish in the oven and bake for 25-30 minutes, or until the top is a lovely golden brown.
- After baking, take it out of the oven and immediately drizzle the cooled syrup over the hot baklava, allowing it to soak in for at least 30 minutes before slicing into squares.
- Enjoy it warm or at room temperature for a delightful treat.
