Description

Keto Matcha & Coconut Bao Bites are delightful low-carb treats that are perfect for satisfying your sweet tooth while staying on track with your keto diet.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or your preferred keto sweetener)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut milk (canned, full-fat)
  • 1 large egg
  • 2 tablespoons melted coconut oil
  • 1 tablespoon matcha powder
  • 1/2 cup unsweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together coconut milk, egg, melted coconut oil, and matcha powder until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Fold in the shredded coconut.
  6. Scoop out tablespoon-sized portions of the dough and roll them into balls.
  7. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Gently flatten each ball slightly with your palm.
  9. Bake for 15-18 minutes, or until the edges are lightly golden.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a different flavor, try adding a teaspoon of vanilla extract to the wet ingredients.
  • You can also substitute the matcha powder with cocoa powder for a chocolate version.
