- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or your preferred keto sweetener)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup coconut milk (canned, full-fat)
- 1 large egg
- 2 tablespoons melted coconut oil
- 1 tablespoon matcha powder
- 1/2 cup unsweetened shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, whisk together coconut milk, egg, melted coconut oil, and matcha powder until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Fold in the shredded coconut.
- Scoop out tablespoon-sized portions of the dough and roll them into balls.
- Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each ball slightly with your palm.
- Bake for 15-18 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a different flavor, try adding a teaspoon of vanilla extract to the wet ingredients.
- You can also substitute the matcha powder with cocoa powder for a chocolate version.
