A creamy and delicious keto-friendly alternative to traditional mashed potatoes made with cauliflower.
Ingredients

- 2 heads of cauliflower, cut into florets
- 4 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Chopped fresh chives for garnish (optional)
Instructions
- Steam the cauliflower florets in a large pot for about 10-12 minutes, or until they are tender and easily pierced with a fork.
- Drain the cauliflower and transfer it to a large mixing bowl or a food processor.
- Add the butter, heavy cream, garlic powder, onion powder, salt, and pepper to the cauliflower.
- Blend or mash the mixture until smooth and creamy. If using a food processor, pulse until the desired consistency is reached.
- Stir in the grated Parmesan cheese, if using, and mix until well combined.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with chopped chives if desired.
Notes
- For a creamier texture, add more heavy cream or butter to the mixture.
- You can also mix in cooked bacon bits or sautéed mushrooms for added flavor.
- For a dairy-free version, substitute the butter and cream with olive oil and unsweetened almond milk.
