Description

A creamy and delicious keto-friendly alternative to traditional mashed potatoes made with cauliflower.


Ingredients

  • 2 heads of cauliflower, cut into florets
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Chopped fresh chives for garnish (optional)

Instructions

  1. Steam the cauliflower florets in a large pot for about 10-12 minutes, or until they are tender and easily pierced with a fork.
  2. Drain the cauliflower and transfer it to a large mixing bowl or a food processor.
  3. Add the butter, heavy cream, garlic powder, onion powder, salt, and pepper to the cauliflower.
  4. Blend or mash the mixture until smooth and creamy. If using a food processor, pulse until the desired consistency is reached.
  5. Stir in the grated Parmesan cheese, if using, and mix until well combined.
  6. Taste and adjust seasoning with additional salt and pepper if needed.
  7. Serve hot, garnished with chopped chives if desired.
