Description

Keto Lebanese Baklava Bites are a delicious and nutty dessert made with walnuts, almonds, and a hint of coconut, perfect for those following a keto diet.


Ingredients

  • 2 cups chopped walnuts
  • 1 cup chopped almonds
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup erythritol or preferred keto sweetener
  • 1/2 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • 1/4 cup sugar-free maple syrup
  • 1/4 teaspoon salt
  • 1 package of thawed phyllo dough (8 oz)
  • 1/4 cup chopped pistachios (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. In a large bowl, mix together the chopped walnuts, almonds, ground cinnamon, shredded coconut, erythritol, and salt until well combined.
  3. Place a single sheet of phyllo dough into the prepared dish and brush it gently with melted butter.
  4. Continue layering with 5 sheets of phyllo, brushing each with butter.
  5. Evenly distribute half of the nut mixture over the phyllo layers.
  6. Add 3 more sheets of phyllo on top, brushing each with melted butter.
  7. Spread the remaining nut mixture over this layer.
  8. Finish by layering another 5 sheets of phyllo, brushing each with butter.
  9. Cut the assembled baklava into squares or diamond shapes using a sharp knife.
  10. In a small saucepan, combine water, sugar-free maple syrup, and vanilla extract, bringing it to a gentle simmer until the sweetener is fully dissolved.
  11. Remove from heat and pour the syrup evenly over the baklava.
  12. Bake for 30-35 minutes or until the top is golden brown and crispy.
  13. Allow to cool for at least 15 minutes before serving, and sprinkle with chopped pistachios if desired.

Notes

  • For added flavor, mix in a pinch of nutmeg with the nut filling.
  • Walnuts can be swapped for pecans or hazelnuts for a unique twist.
