Instructions
- Begin by heating your grill or grill pan to a medium-high temperature.
- In a mixing bowl, combine the ground lamb, coconut flour, shallots, garlic, cilantro, dill, cumin, coriander, smoked paprika, sea salt, black pepper, red pepper flakes, and egg. Stir until all ingredients are thoroughly mixed.
- Shape the mixture into 8 equal portions and mold each portion into a long, cylindrical shape around a skewer.
- If you’re using wooden skewers, remember to soak them in water for 30 minutes to avoid burning.
- Place the skewers on the hot grill and cook for approximately 5-6 minutes on each side, or until the lamb is fully cooked and has developed a beautiful char.
- While the skewers are grilling, prepare the creamy yogurt sauce by blending the Greek yogurt, lime juice, dill, onion powder, salt, and pepper in a separate bowl. Taste and adjust seasoning as needed.
