Description

Keto Korean Bulgogi Beef Lettuce Wraps are a delightful low-carb treat, perfect for a healthy meal.

Ingredients

Scale
  • 1 pound flank steak, sliced thinly against the grain
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 2 tablespoons sesame oil
  • 2 tablespoons keto-friendly sweetener (like erythritol)
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame seeds
  • 1/2 teaspoon freshly ground black pepper
  • 1 head of butter or romaine lettuce, leaves separated
  • 1 small cucumber, cut into thin slices
  • 1 carrot, cut into matchsticks
  • Chopped green onions for garnish

Instructions

  1. In a mixing bowl, whisk together the soy sauce, sesame oil, sweetener, minced garlic, grated ginger, rice vinegar, sesame seeds, and black pepper until well combined.
  2. Add the thinly sliced flank steak to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for a minimum of 30 minutes, or up to 2 hours for enhanced flavor.
  3. Preheat a large skillet or grill pan over medium-high heat.
  4. Remove the marinated beef from the bowl, allowing any excess marinade to drip off.
  5. Sauté the beef in the hot skillet for approximately 3-4 minutes, stirring occasionally, until it is browned and fully cooked.
  6. To create the lettuce rolls, take a leaf of lettuce and place a few pieces of the cooked bulgogi beef inside.
  7. Add slices of cucumber and julienned carrot on top. Finish with a sprinkle of chopped green onions.
  8. Wrap the lettuce around the filling tightly and savor the delicious flavors.

Notes

  • For a crunchy texture, consider adding sliced radishes or bell peppers to your wraps.
  • If you enjoy heat, a drizzle of sriracha or a sprinkle of red pepper flakes can elevate the spice level in your filling.
