Description

Savory Keto Meatballs with Nutty Filling

Ingredients

Scale
  • 1 pound ground beef or lamb
  • 1 cup almond flour
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup water
  • 1 cup walnuts, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder

Instructions

  1. Begin by heating your oven to 375°F.
  2. In a mixing bowl, combine the ground meat with almond flour, cumin, cinnamon, salt, black pepper, and cayenne pepper.
  3. Blend the ingredients thoroughly, then slowly incorporate the water until the mixture is moist yet firm enough to shape.
  4. For the filling, mix the finely chopped walnuts with olive oil, parsley, lemon juice, and garlic powder in another bowl.
  5. Scoop a portion of the meat mixture, roughly the size of a golf ball, and press it flat in your hand.
  6. Add a teaspoon of the walnut filling in the center, then fold the meat around the filling, rolling it into a smooth ball.
  7. Continue this process until all the meat and filling are used.
  8. Arrange the meatballs on a baking sheet lined with parchment paper.
  9. Bake for 25-30 minutes, or until they turn a delightful golden brown.
  10. Serve them warm for a delicious treat!

Notes

  • Ensure the meat mixture is firm enough to hold the filling.
  • Adjust the cayenne pepper according to your spice preference.
