Keto Kashmiri Walnut Chicken is a flavorful dish that combines tender chicken thighs with aromatic spices and the richness of walnuts and coconut milk.


Ingredients

  • 1 ½ pounds boneless, skinless chicken thighs
  • 1 cup walnuts, finely chopped
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • ½ teaspoon chili powder (to taste)
  • 1 cup coconut milk
  • 2 tablespoons ghee or olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Warm the ghee or olive oil in a large skillet over medium heat.
  2. Add the diced onions and sauté until they soften and turn golden, approximately 5 minutes.
  3. Incorporate the minced garlic and grated ginger, stirring for an additional minute.
  4. Introduce the cumin, coriander, turmeric, garam masala, and chili powder into the skillet, mixing thoroughly.
  5. Allow the spices to cook for 2-3 minutes.
  6. Add the chicken thighs to the pan, seasoning with salt, and sear for about 5-7 minutes until golden.
  7. Pour in the coconut milk and gently stir to combine.
  8. Reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes.
  9. After the chicken is cooked, fold in the finely chopped walnuts and let it simmer for another 5 minutes.
  10. Taste and adjust the seasoning if needed.
  11. Serve warm, garnished with fresh cilantro.
