- 1 cup walnuts, finely chopped
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- ½ teaspoon chili powder (to taste)
- 1 cup coconut milk
- 2 tablespoons ghee or olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Warm the ghee or olive oil in a large skillet over medium heat.
- Add the diced onions and sauté until they soften and turn golden, approximately 5 minutes.
- Incorporate the minced garlic and grated ginger, stirring for an additional minute.
- Introduce the cumin, coriander, turmeric, garam masala, and chili powder into the skillet, mixing thoroughly.
- Allow the spices to cook for 2-3 minutes.
- Add the chicken thighs to the pan, seasoning with salt, and sear for about 5-7 minutes until golden.
- Pour in the coconut milk and gently stir to combine.
- Reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes.
- After the chicken is cooked, fold in the finely chopped walnuts and let it simmer for another 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve warm, garnished with fresh cilantro.
