- 1 cup unsweetened almond milk
- 1/2 cup heavy cream
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol (or preferred keto sweetener)
- 1/4 cup hazelnut butter
- 1 teaspoon instant coffee granules
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon chia seeds (optional, for thickening)
Instructions
- In a medium saucepan, combine the almond milk, heavy cream, cocoa powder, powdered erythritol, hazelnut butter, instant coffee granules, vanilla extract, and salt. Whisk together over medium heat until the mixture is smooth and heated through, but not boiling.
- If using chia seeds, stir them into the mixture now. Continue to cook for an additional 2-3 minutes, stirring frequently, until the pudding thickens slightly.
- Remove the saucepan from heat and let the pudding cool for about 10 minutes. Then, pour the mixture into individual serving bowls or ramekins.
- Cover the bowls with plastic wrap and refrigerate for at least 2 hours, or until the pudding is fully set.
- Serve chilled, and if desired, top with whipped cream or crushed hazelnuts for added texture.
Notes
- For a richer flavor, add a pinch of cinnamon or a few drops of hazelnut extract to the mixture before cooking.
- Substitute the hazelnut butter with almond butter or peanut butter for a different nutty flavor.
