  • 1 ½ cups almond flour
  • ¼ cup granulated erythritol
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ½ cup granulated erythritol
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup guava puree (fresh or canned, unsweetened)
  • 1 tablespoon lemon juice
  • 1 teaspoon gelatin powder (optional, for firmness)

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine almond flour, ¼ cup erythritol, and salt. Pour in the melted butter and mix until crumbly. Press the mixture evenly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with ½ cup erythritol and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the guava puree and lemon juice until fully incorporated.
  5. If using gelatin, dissolve it in 2 tablespoons of warm water and add it to the mixture.
  6. Pour the cheesecake filling over the crust in the springform pan.
  7. Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for an additional 30 minutes to cool gradually.
  9. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.
