- 1 ½ cups almond flour
- ¼ cup granulated erythritol
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 16 ounces cream cheese, softened
- ½ cup granulated erythritol
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup guava puree (fresh or canned, unsweetened)
- 1 tablespoon lemon juice
- 1 teaspoon gelatin powder (optional, for firmness)
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan with cooking spray or butter.
- In a medium bowl, combine almond flour, ¼ cup erythritol, and salt. Pour in the melted butter and mix until crumbly. Press the mixture evenly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with ½ cup erythritol and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the guava puree and lemon juice until fully incorporated.
- If using gelatin, dissolve it in 2 tablespoons of warm water and add it to the mixture.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional 30 minutes to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.
Notes
- This recipe serves 8.
- For a tropical twist, top the cheesecake with fresh guava slices or a sugar-free guava glaze before serving.
- Alternatively, add a teaspoon of coconut extract to the filling for a coconut-flavored cheesecake.
