Description

Keto Grilled Harissa Kebabs: Spice Up Your Dinner!

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs, diced into 1-inch chunks
  • 1/4 cup harissa sauce
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 red bell pepper, chopped into 1-inch pieces
  • 1 green bell pepper, chopped into 1-inch pieces
  • 1 medium red onion, cut into large wedges

Instructions

  1. In a mixing bowl, whisk together the harissa sauce, olive oil, lemon juice, garlic powder, onion powder, smoked paprika, sea salt, and black pepper until well combined.
  2. Add the chicken chunks to the bowl, ensuring they are thoroughly coated in the marinade.
  3. Cover the bowl with plastic wrap and let it sit in the refrigerator for a minimum of 30 minutes, or up to 2 hours for an intensified flavor.
  4. Heat your grill to a medium-high setting.
  5. Assemble the skewers by alternating the marinated chicken pieces with the red and green bell peppers and red onion wedges.
  6. Grill the skewers for about 10-12 minutes, turning them occasionally to achieve even cooking and a nice char.
  7. Ensure the chicken reaches an internal temperature of 165°F for safe consumption.
  8. Once cooked, take the skewers off the grill and allow them to rest for a few moments before serving.
  9. Enjoy them warm alongside a refreshing low-carb salad or your preferred dipping sauce.

Notes

  • For an extra kick, consider letting the chicken marinate overnight.
  • You can also swap the chicken for shrimp or beef to mix things up.
  • If you desire a milder taste, simply reduce the harissa sauce or incorporate a bit of yogurt into the marinade.
