Ingredients

  • 2 cups almond flour
  • 1/2 cup erythritol (or your preferred keto sweetener)
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, erythritol, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Stir until well mixed.
  3. In another bowl, cream together the softened butter, egg, vanilla extract, and apple cider vinegar until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each ball slightly with the palm of your hand or the bottom of a glass.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • This recipe makes about 24 cookies.
  • For a spicier kick, add an extra 1/2 teaspoon of ground ginger.
