- 2 cups almond flour
- 1/2 cup erythritol (or your preferred keto sweetener)
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon apple cider vinegar
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, erythritol, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Stir until well mixed.
- In another bowl, cream together the softened butter, egg, vanilla extract, and apple cider vinegar until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the palm of your hand or the bottom of a glass.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- This recipe makes about 24 cookies.
- For a spicier kick, add an extra 1/2 teaspoon of ground ginger.
- To make them festive, consider adding a few sugar-free chocolate chips or chopped nuts to the dough before baking.
