Description

Keto Energy Cubes with Rosemary and Cacao are a delicious and healthy snack that boosts your energy while keeping you in ketosis.


Ingredients

Scale
  • 1 cup almond butter
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil, melted
  • 1/4 cup erythritol (or preferred keto sweetener)
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. In a large mixing bowl, combine the almond butter, unsweetened cocoa powder, melted coconut oil, erythritol, chopped rosemary, vanilla extract, and sea salt. Mix well until all ingredients are fully incorporated and the mixture is smooth.
  2. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  3. Pour the mixture into the prepared baking dish and spread it evenly using a spatula.
  4. Place the dish in the refrigerator and chill for at least 2 hours, or until the mixture is firm.
  5. Once set, lift the mixture out of the dish using the parchment paper and cut it into small cubes.
  6. Store the energy cubes in an airtight container in the refrigerator for up to two weeks.

Notes
