Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tablespoon apple cider vinegar
  • 1 pound ground beef (or chicken)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine almond flour, coconut flour, salt, and baking powder. Add softened butter, egg, and apple cider vinegar. Mix until a dough forms. If the dough is too crumbly, add a teaspoon of water at a time until it holds together.
  3. In a skillet over medium heat, cook the ground beef with diced onion and minced garlic until the meat is browned. Drain excess fat. Stir in cumin, paprika, chili powder, salt, and pepper. Remove from heat and mix in shredded cheese and cilantro if using.
  4. Divide the dough in half. Roll out one half between two sheets of parchment paper into a circle about 1/4 inch thick. Transfer to a pie dish, pressing it into the bottom and up the sides.
  5. Fill the crust with the meat mixture. Roll out the second half of the dough and place it over the filling. Seal the edges by crimping with a fork. Cut a few slits in the top to allow steam to escape.
  6. Bake for 25-30 minutes, or until the crust is golden brown. Let cool for 10 minutes before slicing.
