A delicious and unique Keto Eggplant Lasagna with a flavorful curry cream sauce.

- 2 medium eggplants, sliced lengthwise into 1/4-inch thick slices
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1 tablespoon curry powder
Instructions
- Preheat the oven to 375°F.
- Sprinkle the eggplant slices with salt and let them sit for 20 minutes to draw out moisture. Rinse and pat dry.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and ground meat, cooking until browned. Drain any excess fat.
- Stir in crushed tomatoes, oregano, basil, and black pepper. Simmer for 10 minutes.
- In a separate bowl, mix ricotta cheese, half of the mozzarella, and half of the Parmesan. Set aside.
- In a small saucepan, combine heavy cream and curry powder over low heat, stirring until well blended. Remove from heat.
- In a 9×13-inch baking dish, layer half of the eggplant slices, followed by half of the meat mixture, half of the ricotta mixture, and half of the curry cream. Repeat the layers, finishing with the remaining mozzarella and Parmesan on top.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the lasagna cool for 10 minutes before slicing and serving.
Notes
- For a spicier kick, add red pepper flakes to the meat mixture.
- For a vegetarian option, substitute the ground meat with sautéed mushrooms and spinach.
