Ingredients

  • 1 cup heavy cream
  • 1 cup unsweetened almond milk
  • 4 large eggs
  • 1/2 cup erythritol or your preferred keto sweetener
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free dulce de leche (store-bought or homemade)
  • 1 tablespoon butter (for greasing the pan)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and set aside.
  2. In a medium saucepan over medium heat, combine the heavy cream and almond milk. Heat until just simmering, then remove from heat.
  3. In a large mixing bowl, whisk together the eggs, erythritol, vanilla extract, and salt until well combined.
  4. Slowly pour the warm cream mixture into the egg mixture while whisking continuously to prevent the eggs from scrambling.
  5. Stir in the sugar-free dulce de leche until fully incorporated.
  6. Pour the flan mixture into the prepared cake pan.
  7. Place the cake pan in a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the cake pan (this creates a water bath).
  8. Bake for 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.
  9. Remove the flan from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  10. To serve, run a knife around the edges of the flan, then invert it onto a serving plate.

Notes

  • For a richer flavor, add a pinch of cinnamon or nutmeg to the egg mixture.
  • If you prefer a more traditional caramel topping, consider making a keto-friendly caramel sauce using erythritol and butter to drizzle over the flan before serving.
