- 1 cup heavy cream
- 1 cup unsweetened almond milk
- 4 large eggs
- 1/2 cup erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sugar-free dulce de leche (store-bought or homemade)
- 1 tablespoon butter (for greasing the pan)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and set aside.
- In a medium saucepan over medium heat, combine the heavy cream and almond milk. Heat until just simmering, then remove from heat.
- In a large mixing bowl, whisk together the eggs, erythritol, vanilla extract, and salt until well combined.
- Slowly pour the warm cream mixture into the egg mixture while whisking continuously to prevent the eggs from scrambling.
- Stir in the sugar-free dulce de leche until fully incorporated.
- Pour the flan mixture into the prepared cake pan.
- Place the cake pan in a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the cake pan (this creates a water bath).
- Bake for 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.
- Remove the flan from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
- To serve, run a knife around the edges of the flan, then invert it onto a serving plate.
Notes
- For a richer flavor, add a pinch of cinnamon or nutmeg to the egg mixture.
- If you prefer a more traditional caramel topping, consider making a keto-friendly caramel sauce using erythritol and butter to drizzle over the flan before serving.
