- 1 ½ cups almond flour
- ½ cup erythritol (or preferred keto sweetener)
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 large eggs
- ¼ cup unsweetened almond milk
- ¼ cup melted coconut oil
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or coconut oil.
- In a large mixing bowl, combine almond flour, erythritol, baking powder, salt, and cinnamon (if using). Mix well.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined. The batter will be thick.
- Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
- Bake in the preheated oven for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted comes out clean.
- Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chocolate version, add ¼ cup unsweetened cocoa powder to the dry ingredients.
- Drizzle with sugar-free chocolate or glaze made from powdered erythritol mixed with almond milk for added sweetness.
