Keto Crab-Stuffed Zucchini Boats are a delicious low-carb dish filled with crab meat and creamy cheeses, perfect for a healthy meal.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup cooked crab meat (lump or claw)
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 teaspoon paprika (for garnish)

Instructions

  1. Preheat your oven to 375°F.
  2. Slice the zucchinis in half lengthwise and scoop out the center with a spoon to create boats. Reserve the scooped-out flesh.
  3. In a mixing bowl, combine the crab meat, cream cheese, mozzarella cheese, Parmesan cheese, green onions, lemon juice, garlic powder, Old Bay seasoning, salt, and pepper. Mix until well combined.
  4. Chop the reserved zucchini flesh and fold it into the crab mixture.
  5. Drizzle olive oil over the zucchini boats and season with salt and pepper. Place them on a baking sheet lined with parchment paper.
  6. Fill each zucchini boat generously with the crab mixture.
  7. Sprinkle paprika on top for garnish.
  8. Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the tops are golden brown.
  9. Let cool for a few minutes before serving.
