- 2 medium zucchinis
- 1 cup cooked crab meat (lump or claw)
- 1/2 cup cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup green onions, chopped
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 teaspoon paprika (for garnish)
Instructions
- Preheat your oven to 375°F.
- Slice the zucchinis in half lengthwise and scoop out the center with a spoon to create boats. Reserve the scooped-out flesh.
- In a mixing bowl, combine the crab meat, cream cheese, mozzarella cheese, Parmesan cheese, green onions, lemon juice, garlic powder, Old Bay seasoning, salt, and pepper. Mix until well combined.
- Chop the reserved zucchini flesh and fold it into the crab mixture.
- Drizzle olive oil over the zucchini boats and season with salt and pepper. Place them on a baking sheet lined with parchment paper.
- Fill each zucchini boat generously with the crab mixture.
- Sprinkle paprika on top for garnish.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the tops are golden brown.
- Let cool for a few minutes before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the crab mixture.
- You can substitute the crab meat with cooked shrimp or chicken for a different flavor.
