- 2 cups almond flour
- 1 cup unsweetened shredded coconut
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup erythritol or preferred keto sweetener
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened coconut milk
- 1/2 cup heavy cream
- 1/2 cup unsweetened almond milk
- 1/4 cup powdered erythritol (for topping)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
- In a large bowl, combine almond flour, shredded coconut, baking powder, and salt. Mix well and set aside.
- In another bowl, beat the softened butter and erythritol together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk. Mix until just combined.
- Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.
- In a separate bowl, whisk together the heavy cream and almond milk. Once the cake is cool, poke holes all over the top using a fork. Slowly pour the cream mixture over the cake, allowing it to soak in.
- Refrigerate the cake for at least 2 hours, or overnight for best results.
- Before serving, sprinkle the top with powdered erythritol and cinnamon if desired. Cut into squares and enjoy!
Notes
- For a chocolate twist, add 1/4 cup unsweetened cocoa powder to the dry ingredients.
- For added texture, fold in 1/2 cup of chopped nuts or sugar-free chocolate chips into the batter before baking.
