A delicious and guilt-free Keto Coconut Tres Leches Cake that satisfies your sweet tooth without the carbs.


Ingredients

  • 2 cups almond flour
  • 1 cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup erythritol or preferred keto sweetener
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened coconut milk
  • 1/2 cup heavy cream
  • 1/2 cup unsweetened almond milk
  • 1/4 cup powdered erythritol (for topping)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a large bowl, combine almond flour, shredded coconut, baking powder, and salt. Mix well and set aside.
  3. In another bowl, beat the softened butter and erythritol together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk. Mix until just combined.
  5. Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.
  6. In a separate bowl, whisk together the heavy cream and almond milk. Once the cake is cool, poke holes all over the top using a fork. Slowly pour the cream mixture over the cake, allowing it to soak in.
  7. Refrigerate the cake for at least 2 hours, or overnight for best results.
  8. Before serving, sprinkle the top with powdered erythritol and cinnamon if desired. Cut into squares and enjoy!
