- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup erythritol (or preferred sweetener)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1 tablespoon vanilla extract
- 1 tablespoon ground cinnamon
- 2 tablespoons softened cream cheese (optional, for a richer swirl)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined.
- In a small bowl, mix the ground cinnamon and softened cream cheese (if using) until smooth.
- Pour half of the bread batter into the prepared loaf pan. Spread the cinnamon mixture evenly over the batter, then top with the remaining batter.
- Use a knife to gently swirl the cinnamon mixture into the batter for a marbled effect.
- Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For a nut-free version, substitute almond flour with sunflower seed flour.
- Add chopped nuts or sugar-free chocolate chips to the batter for extra texture and flavor.
