Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup erythritol (or preferred sweetener)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 2 tablespoons softened cream cheese (optional, for a richer swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.
  3. In another bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined.
  5. In a small bowl, mix the ground cinnamon and softened cream cheese (if using) until smooth.
  6. Pour half of the bread batter into the prepared loaf pan. Spread the cinnamon mixture evenly over the batter, then top with the remaining batter.
  7. Use a knife to gently swirl the cinnamon mixture into the batter for a marbled effect.
  8. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
