Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup unsweetened almond butter
  • 1/4 cup powdered erythritol (or preferred sweetener)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened shredded coconut (optional)
  • 1 tablespoon melted butter (for coating)
  • 1 tablespoon cinnamon sugar (mix of erythritol and cinnamon for rolling)

Instructions

  1. In a large mixing bowl, combine the softened cream cheese and almond butter. Use a hand mixer or spatula to blend until smooth and creamy.
  2. Add the powdered erythritol, vanilla extract, ground cinnamon, and salt to the mixture. Mix until well combined.
  3. Gradually add the coconut flour, mixing until fully incorporated. If using, fold in the shredded coconut for added texture.
  4. Refrigerate the mixture for about 30 minutes to firm up.
  5. Once chilled, use a small cookie scoop or your hands to form the mixture into bite-sized balls.
  6. Roll each ball in melted butter, then coat with the cinnamon sugar mixture.
  7. Place the coated fat bombs on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.
  8. Serve chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator.

Notes
