- 1 teaspoon vanilla extract

- 1/4 cup coconut flour
- 1/4 cup unsweetened shredded coconut (optional)
- 1 tablespoon melted butter (for coating)
- 1 tablespoon cinnamon sugar (mix of erythritol and cinnamon for rolling)
Instructions
- In a large mixing bowl, combine the softened cream cheese and almond butter. Use a hand mixer or spatula to blend until smooth and creamy.
- Add the powdered erythritol, vanilla extract, ground cinnamon, and salt to the mixture. Mix until well combined.
- Gradually add the coconut flour, mixing until fully incorporated. If using, fold in the shredded coconut for added texture.
- Refrigerate the mixture for about 30 minutes to firm up.
- Once chilled, use a small cookie scoop or your hands to form the mixture into bite-sized balls.
- Roll each ball in melted butter, then coat with the cinnamon sugar mixture.
- Place the coated fat bombs on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.
- Serve chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator.
Notes
- For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the mixture before chilling.
- Experiment with different nut butters, such as peanut or cashew, to customize the flavor of your fat bombs.
