Keto Churro Fat Bombs (Cinnamon & Vanilla) are heavenly!
Ingredients

- 1 cup cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1/2 cup powdered erythritol (or your preferred keto sweetener)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1 tablespoon coconut oil (for coating)
- Additional cinnamon and erythritol mixture for dusting
Instructions
- In a mixing bowl, combine the softened cream cheese and butter until smooth and creamy.
- Add the powdered erythritol, vanilla extract, ground cinnamon, and salt. Mix until well combined.
- Gradually add the almond flour and coconut flour, mixing until a dough forms.
- Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.
- Once chilled, scoop out tablespoon-sized portions of the dough and roll them into balls.
- Melt the coconut oil in a small bowl. Roll each ball in the melted coconut oil, then coat with the cinnamon and erythritol mixture.
- Place the coated fat bombs on a parchment-lined baking sheet and refrigerate for at least 1 hour to firm up.
- Serve chilled or at room temperature.
Notes
- For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the dough.
- Try adding a few drops of almond extract for a different flavor profile.
