Description

Keto Churro Fat Bombs (Cinnamon & Vanilla) are heavenly!


Ingredients

Scale
  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered erythritol (or your preferred keto sweetener)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 tablespoon coconut oil (for coating)
  • Additional cinnamon and erythritol mixture for dusting

Instructions

  1. In a mixing bowl, combine the softened cream cheese and butter until smooth and creamy.
  2. Add the powdered erythritol, vanilla extract, ground cinnamon, and salt. Mix until well combined.
  3. Gradually add the almond flour and coconut flour, mixing until a dough forms.
  4. Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.
  5. Once chilled, scoop out tablespoon-sized portions of the dough and roll them into balls.
  6. Melt the coconut oil in a small bowl. Roll each ball in the melted coconut oil, then coat with the cinnamon and erythritol mixture.
  7. Place the coated fat bombs on a parchment-lined baking sheet and refrigerate for at least 1 hour to firm up.
  8. Serve chilled or at room temperature.

Notes

  • For a chocolate twist, add 2 tablespoons of unsweetened cocoa powder to the dough.
  • Try adding a few drops of almond extract for a different flavor profile.
