- 1 cup cream cheese, softened
- 1/2 cup heavy whipping cream
- 1/4 cup unsweetened almond milk
- 1/4 cup unsweetened cocoa powder (for dusting)
- Chocolate shavings or keto-friendly chocolate chips (for garnish, optional)
Instructions
- In a mixing bowl, combine almond flour, cocoa powder, powdered erythritol, and salt. Stir until well mixed.
- Add melted butter and vanilla extract to the dry ingredients. Mix until a dough forms.
- Press the dough evenly into the bottom of 6 silicone muffin cups or a lined muffin tin to create the crust.
- In another bowl, beat the softened cream cheese until smooth. Gradually add heavy whipping cream and almond milk, mixing until well combined and fluffy.
- Spoon the cream cheese mixture over the crust in each cup, smoothing the tops with a spatula.
- Refrigerate the cups for at least 2 hours to set.
- Before serving, dust the tops with unsweetened cocoa powder and garnish with chocolate shavings or keto-friendly chocolate chips if desired.
Notes
- For added flavor, mix in a teaspoon of instant coffee granules into the cream cheese mixture for a mocha twist.
- Substitute the almond flour with coconut flour for a different texture, but use only 1/4 cup of coconut flour as it absorbs more moisture.
