  • 1 cup cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/4 cup unsweetened almond milk
  • 1/4 cup unsweetened cocoa powder (for dusting)
  • Chocolate shavings or keto-friendly chocolate chips (for garnish, optional)

Instructions

  1. In a mixing bowl, combine almond flour, cocoa powder, powdered erythritol, and salt. Stir until well mixed.
  2. Add melted butter and vanilla extract to the dry ingredients. Mix until a dough forms.
  3. Press the dough evenly into the bottom of 6 silicone muffin cups or a lined muffin tin to create the crust.
  4. In another bowl, beat the softened cream cheese until smooth. Gradually add heavy whipping cream and almond milk, mixing until well combined and fluffy.
  5. Spoon the cream cheese mixture over the crust in each cup, smoothing the tops with a spatula.
  6. Refrigerate the cups for at least 2 hours to set.
