Ingredients

  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granulated erythritol (or preferred keto sweetener)
  • ½ cup unsweetened applesauce
  • 4 large eggs
  • ½ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • ½ cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal.
  3. In a large mixing bowl, combine the almond flour, cocoa powder, baking powder, baking soda, salt, and erythritol. Whisk together until well blended.
  4. In another bowl, mix the applesauce, eggs, almond milk, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. If using, fold in the sugar-free chocolate chips.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. For serving, you can frost with a keto-friendly cream cheese frosting or serve with whipped coconut cream.

  • You can substitute the almond flour with coconut flour, but use only ½ cup as coconut flour absorbs more moisture.
