Description

A delicious and guilt-free Keto Chocolate Soufflé that is perfect for satisfying your chocolate cravings.


Ingredients

Scale
  • 2 ounces unsweetened dark chocolate (70% cocoa or higher)
  • 2 tablespoons unsalted butter
  • 2 large eggs, separated
  • 2 tablespoons granulated erythritol (or preferred keto sweetener)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease two ramekins with butter and dust with a little erythritol to prevent sticking.
  2. In a small saucepan over low heat, melt the dark chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly.
  3. In a mixing bowl, whisk the egg yolks, erythritol, and vanilla extract until well combined. Slowly add the melted chocolate mixture, stirring continuously until smooth.
  4. In a separate bowl, beat the egg whites with cream of tartar and a pinch of salt until stiff peaks form.
  5. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
  6. Pour the soufflé mixture evenly into the prepared ramekins.
  7. Bake for 12-15 minutes, or until the soufflés have risen and are set on the outside but still slightly soft in the center.
  8. Serve immediately for the best texture, optionally dusted with more erythritol or topped with whipped cream.

Notes

  • For a mocha flavor, add 1 teaspoon of instant coffee granules to the melted chocolate mixture.
  • If you want a richer taste, substitute half of the dark chocolate with unsweetened cocoa powder and adjust the sweetener to taste.
