A delicious and guilt-free Keto Chocolate Soufflé that is perfect for satisfying your chocolate cravings.
Ingredients

- 2 ounces unsweetened dark chocolate (70% cocoa or higher)
- 2 tablespoons unsalted butter
- 2 large eggs, separated
- 2 tablespoons granulated erythritol (or preferred keto sweetener)
- 1 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- Pinch of salt
Instructions
- Preheat your oven to 375°F (190°C). Grease two ramekins with butter and dust with a little erythritol to prevent sticking.
- In a small saucepan over low heat, melt the dark chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly.
- In a mixing bowl, whisk the egg yolks, erythritol, and vanilla extract until well combined. Slowly add the melted chocolate mixture, stirring continuously until smooth.
- In a separate bowl, beat the egg whites with cream of tartar and a pinch of salt until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
- Pour the soufflé mixture evenly into the prepared ramekins.
- Bake for 12-15 minutes, or until the soufflés have risen and are set on the outside but still slightly soft in the center.
- Serve immediately for the best texture, optionally dusted with more erythritol or topped with whipped cream.
Notes
- For a mocha flavor, add 1 teaspoon of instant coffee granules to the melted chocolate mixture.
- If you want a richer taste, substitute half of the dark chocolate with unsweetened cocoa powder and adjust the sweetener to taste.
