A rich and creamy Keto Chocolate Peanut Butter Pie with a nutty chocolate crust and a delicious peanut butter mousse filling, topped with chocolate ganache and roasted peanuts.

- 3/4 cup raw almonds
- 1/4 cup coconut flour
- 1/4 cup granulated allulose sweetener or granulated monkfruit sweetener
- 1/4 cup cocoa powder
- 1/8 tsp salt
- 2 Tbsp butter, softened
- 1 Tbsp cold water
- 1 cup sugar-free creamy peanut butter
- 1/2 cup heavy cream
- 2 tsp vanilla extract, divided
- 1/2 cup powdered monkfruit sweetener, divided
- 6 oz cream cheese, softened
- 6 Tbsp butter, softened
- 1½ oz half bar sugar-free dark chocolate bar, chopped
- 1 Tbsp coconut oil
- 2 Tbsp heavy cream
- 2 Tbsp chopped roasted peanuts
Instructions
- Preheat the oven to 350°F (175°C). In a food processor, combine the almonds, coconut flour, sweetener, cocoa powder, and salt. Pulse until the almonds are medium-fine.
- Add the butter and pulse until the mixture starts to clump. Sprinkle the water over the mixture and pulse until combined.
- Press the dough into a ¼-inch layer in a 9-inch pie dish, working it up the sides. Bake for 15 to 18 minutes until dry and set. Let cool and refrigerate.
- In a stand mixer, whisk the heavy cream and half of the vanilla until soft peaks form. Add half of the powdered sweetener and continue beating until semi-stiff peaks form. Set aside.
- In the same bowl, beat together the peanut butter, cream cheese, butter, remaining powdered sweetener, and vanilla until light and fluffy. Fold in the whipped cream until smooth. Pour into the crust and refrigerate.
- For the ganache, combine the chopped chocolate and coconut oil in a microwave-safe bowl and melt. Stir in the heavy cream until combined. Drizzle over the pie and sprinkle with chopped peanuts.
- Chill the pie for at least 1 hour before serving.
