Description

Keto Choclo Soup (Corn-Free Version) is a creamy and flavorful soup that is perfect for those following a keto diet. This delicious recipe is packed with vegetables and cheese, making it a satisfying meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 medium yellow bell pepper, diced
  • 1 cup cauliflower florets
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced zucchini and yellow bell pepper to the pot and cook for another 5 minutes, stirring occasionally.
  4. Add the cauliflower florets, vegetable broth, ground cumin, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes, or until the cauliflower is tender.
  5. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
  6. Return the blended soup to the pot and stir in the heavy cream and shredded cheddar cheese. Heat over low until the cheese is melted and the soup is heated through.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.

  • For added protein, consider stirring in cooked shredded chicken or crumbled bacon before serving.
  • For a spicier version, add a diced jalapeño or a pinch of cayenne pepper during the sautéing step.
