- 2 pounds bone-in, skin-on chicken thighs
- 2 tablespoons extra virgin olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon cinnamon powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 can (14 ounces) diced tomatoes, drained
- 1 cup chicken stock
- 1/2 cup green olives, pitted and sliced
- 1/2 cup black olives, pitted and sliced
- 1 lemon, zested and juiced
- Salt and black pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Heat the extra virgin olive oil in a large Dutch oven over medium-high heat.
- Season the chicken thighs generously with salt and black pepper, then place them skin-side down in the pot and sear for 5-7 minutes until golden.
- Flip the chicken and cook for another 5 minutes, then remove from the pot and set aside.
- Add the diced onion to the pot and sauté for about 5 minutes until translucent.
- Incorporate the minced garlic and cook for an additional minute.
- Add the cumin, coriander, cinnamon, smoked paprika, and cayenne pepper, stirring for 1-2 minutes.
- Pour in the drained diced tomatoes and chicken stock, mixing well.
- Return the seared chicken thighs to the pot, skin-side up, cover, and reduce heat to low. Simmer for 30-40 minutes until the chicken is cooked and tender.
- Stir in the green and black olives, lemon zest, and juice, cooking for an additional 5 minutes.
- Taste and adjust seasoning with more salt and black pepper if necessary. Serve hot, garnished with fresh cilantro or parsley.
Notes
- For a spicier dish, include the cayenne pepper.
- Serve with a side of cauliflower rice for a complete keto meal.
