Description

A delightful Keto Chicken Tagine with Olives & Lemon recipe that combines Mediterranean flavors in a hearty stew.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cinnamon powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 cup chicken stock
  • 1/2 cup green olives, pitted and sliced
  • 1/2 cup black olives, pitted and sliced
  • 1 lemon, zested and juiced
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat the extra virgin olive oil in a large Dutch oven over medium-high heat.
  2. Season the chicken thighs generously with salt and black pepper, then place them skin-side down in the pot and sear for 5-7 minutes until golden.
  3. Flip the chicken and cook for another 5 minutes, then remove from the pot and set aside.
  4. Add the diced onion to the pot and sauté for about 5 minutes until translucent.
  5. Incorporate the minced garlic and cook for an additional minute.
  6. Add the cumin, coriander, cinnamon, smoked paprika, and cayenne pepper, stirring for 1-2 minutes.
  7. Pour in the drained diced tomatoes and chicken stock, mixing well.
  8. Return the seared chicken thighs to the pot, skin-side up, cover, and reduce heat to low. Simmer for 30-40 minutes until the chicken is cooked and tender.
  9. Stir in the green and black olives, lemon zest, and juice, cooking for an additional 5 minutes.
  10. Taste and adjust seasoning with more salt and black pepper if necessary. Serve hot, garnished with fresh cilantro or parsley.

Notes

  • For a spicier dish, include the cayenne pepper.
  • Serve with a side of cauliflower rice for a complete keto meal.
