Description

Keto Chicken Kiev is a delicious low-carb dish that features tender chicken breasts filled with a flavorful garlic herb butter, coated in a crispy pork rind crust.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup almond flour
  • 2 large eggs, beaten
  • 1 cup pork rinds, crushed (for coating)
  • Olive oil or avocado oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the softened butter, minced garlic, parsley, dill, lemon juice, salt, and pepper until well combined.
  3. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1/2 inch thick.
  4. Take a portion of the garlic herb butter (about 2 tablespoons) and place it in the center of each chicken breast. Fold the sides of the chicken over the butter and roll it tightly, securing the ends with toothpicks if necessary.
  5. Set up a breading station: Place the almond flour in one shallow dish, the beaten eggs in another, and the crushed pork rinds in a third.
  6. Dredge each chicken roll in the almond flour, then dip it in the beaten eggs, and finally coat it with the crushed pork rinds. Make sure each piece is fully coated.
  7. Heat a skillet over medium heat and add enough oil to cover the bottom. Once hot, carefully add the chicken rolls and cook for about 3-4 minutes on each side until golden brown.
  8. Transfer the browned chicken to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  9. Remove from the oven and let rest for a few minutes before serving.
