  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (adjust to preference)
  • 1/2 cup chopped tomatoes (fresh or canned)
  • Salt and freshly ground black pepper to taste
  • Chopped fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Begin by heating avocado oil in a large skillet over medium-high heat. Add the diced chicken thighs and season with salt and black pepper. Sauté for about 6-8 minutes, or until the chicken is golden and fully cooked. Transfer the chicken to a plate and keep warm.
  2. In the same skillet, toss in the sliced onion and both bell peppers. Stir-fry for around 4-5 minutes until they soften but still retain some crunch.
  3. Next, introduce the minced garlic and ginger to the pan, stirring continuously for about a minute until aromatic.
  4. Sprinkle the cumin, coriander, garam masala, turmeric, and cayenne pepper over the vegetables, mixing well to ensure they are evenly coated with the spices.
  5. Incorporate the chopped tomatoes and return the cooked chicken to the skillet. Stir everything together and let it cook for an additional 3-4 minutes, allowing the flavors to blend beautifully.
  6. Adjust the seasoning if needed, then finish with a sprinkle of fresh cilantro. Serve hot with lime wedges on the side for an extra zing.
