- 1 green bell pepper, julienned

- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cayenne pepper (adjust to preference)
- 1/2 cup chopped tomatoes (fresh or canned)
- Salt and freshly ground black pepper to taste
- Chopped fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Begin by heating avocado oil in a large skillet over medium-high heat. Add the diced chicken thighs and season with salt and black pepper. Sauté for about 6-8 minutes, or until the chicken is golden and fully cooked. Transfer the chicken to a plate and keep warm.
- In the same skillet, toss in the sliced onion and both bell peppers. Stir-fry for around 4-5 minutes until they soften but still retain some crunch.
- Next, introduce the minced garlic and ginger to the pan, stirring continuously for about a minute until aromatic.
- Sprinkle the cumin, coriander, garam masala, turmeric, and cayenne pepper over the vegetables, mixing well to ensure they are evenly coated with the spices.
- Incorporate the chopped tomatoes and return the cooked chicken to the skillet. Stir everything together and let it cook for an additional 3-4 minutes, allowing the flavors to blend beautifully.
- Adjust the seasoning if needed, then finish with a sprinkle of fresh cilantro. Serve hot with lime wedges on the side for an extra zing.
