Description

Keto Chicken and Waffles: A Delicious Guilt-Free Treat!

Ingredients

Scale
  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • 1 pound chicken tenders
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • Oil for frying (avocado or coconut oil recommended)
  • Sugar-free syrup for drizzling

Instructions

  1. Combine the almond flour, baking powder, salt, and cinnamon in a mixing bowl, ensuring everything is well blended.
  2. In a separate bowl, whisk together the eggs, almond milk, and vanilla extract until frothy.
  3. Gradually pour the wet mixture into the dry ingredients, stirring until a smooth batter forms. Allow the batter to rest for about 5 minutes to thicken.
  4. Prepare the chicken by soaking the tenders in buttermilk mixed with garlic powder, onion powder, smoked paprika, salt, and pepper. Let the chicken marinate for a minimum of 30 minutes.
  5. Heat oil in a skillet over medium heat. Once hot, take the chicken out of the marinade and carefully place it in the skillet. Fry the chicken for approximately 5-7 minutes on each side until crispy and fully cooked.
  6. Preheat your waffle maker according to its instructions. Pour the almond flour batter into the waffle maker and cook until the waffles are golden and crisp, typically around 3-5 minutes.
  7. To serve, stack a waffle on a plate, top it with the crispy fried chicken, and drizzle with sugar-free syrup.

Notes

  • Enhance the waffle batter with a splash of vanilla extract for extra flavor.
  • Experiment with different spice blends for the chicken, such as Cajun or Italian seasoning.
