Description

Keto Chicken Adobo is a flavorful and low-carb dish that combines tender chicken thighs with a savory marinade, perfect for those following a ketogenic diet.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1/2 cup soy sauce (or coconut aminos for a soy-free option)
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 teaspoon paprika
  • Salt to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. In a large bowl, combine the soy sauce, apple cider vinegar, water, minced garlic, bay leaves, black peppercorns, and paprika. Add the chicken thighs and marinate for at least 30 minutes, or up to 4 hours in the refrigerator for more flavor.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and sear the chicken thighs skin-side down for about 5-7 minutes until golden brown. Flip and cook for another 5 minutes.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the sliced onion and sauté until translucent, about 3-4 minutes.
  4. Return the chicken to the skillet and pour the reserved marinade over the top. Bring to a simmer, then reduce the heat to low. Cover and cook for 30-40 minutes, or until the chicken is cooked through and tender.
  5. If desired, remove the lid and let the sauce reduce for an additional 5-10 minutes for a thicker consistency. Taste and adjust seasoning with salt if necessary.
  6. Serve hot, garnished with chopped green onions if using.

Notes

  • For a spicier version, add 1-2 sliced jalapeños to the marinade.
  • To make it more aromatic, include a teaspoon of ground ginger in the marinade.
