- 3 large eggs
- ¼ cup unsweetened cocoa powder
- ½ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- ½ cup sugar-free chocolate chunks
- ½ cup fresh or frozen cherries, pitted and chopped
Instructions
- Preheat the oven to 350°F and grease a donut pan.
- In a large bowl, combine almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, cocoa powder, almond milk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the chocolate chunks and chopped cherries gently.
- Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, consider adding a teaspoon of espresso powder to the batter.
