- 1 medium head of green cabbage, cut into 8 wedges
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup white miso paste
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or sugar substitute (like erythritol)
- 1 teaspoon grated fresh ginger
- 1 teaspoon minced garlic
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Preheat your grill or a grill pan over medium-high heat.
- In a large bowl, combine the olive oil, salt, and black pepper. Toss the cabbage wedges in the oil mixture until well coated.
- Place the cabbage wedges on the grill and cook for about 4-5 minutes on each side, or until they are charred and tender. Remove from the grill and set aside.
- In a small bowl, whisk together the miso paste, rice vinegar, sesame oil, honey or sugar substitute, grated ginger, and minced garlic until smooth.
- Brush the miso glaze generously over the charred cabbage wedges. Return them to the grill for an additional 2-3 minutes to caramelize the glaze.
- Remove from the grill and garnish with sliced green onions and sesame seeds before serving.
Notes
- For added flavor, try adding a sprinkle of crushed red pepper flakes to the miso glaze for a spicy kick.
- You can substitute the green cabbage with red cabbage for a vibrant color and slightly different flavor profile.
