Ingredients

  • 1 medium head of green cabbage, cut into 8 wedges
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup white miso paste
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or sugar substitute (like erythritol)
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat your grill or a grill pan over medium-high heat.
  2. In a large bowl, combine the olive oil, salt, and black pepper. Toss the cabbage wedges in the oil mixture until well coated.
  3. Place the cabbage wedges on the grill and cook for about 4-5 minutes on each side, or until they are charred and tender. Remove from the grill and set aside.
  4. In a small bowl, whisk together the miso paste, rice vinegar, sesame oil, honey or sugar substitute, grated ginger, and minced garlic until smooth.
  5. Brush the miso glaze generously over the charred cabbage wedges. Return them to the grill for an additional 2-3 minutes to caramelize the glaze.
  6. Remove from the grill and garnish with sliced green onions and sesame seeds before serving.

Notes

  • For added flavor, try adding a sprinkle of crushed red pepper flakes to the miso glaze for a spicy kick.
  • You can substitute the green cabbage with red cabbage for a vibrant color and slightly different flavor profile.
