- 1 medium head of cauliflower (about 4 cups riced)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pizza sauce (sugar-free)
- 1/2 cup sliced pepperoni (optional)
- 1/4 cup chopped fresh basil (for garnish, optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Remove the leaves and stem from the cauliflower, then cut it into florets. Using a food processor, pulse the florets until they resemble rice (about 4 cups).
- Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for 5-6 minutes, until softened. Let it cool for a few minutes.
- Once cooled, place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large mixing bowl, combine the riced cauliflower, mozzarella cheese, Parmesan cheese, eggs, garlic powder, oregano, salt, and pepper. Mix until well combined.
- Scoop about 2 tablespoons of the mixture and form into small bite-sized rounds, placing them on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
- Remove from the oven and top each bite with a spoonful of pizza sauce and a slice of pepperoni, if using. Return to the oven for an additional 5 minutes to heat the toppings.
- Garnish with fresh basil if desired and serve warm.

- For a vegetarian option, skip the pepperoni and add your favorite vegetables like bell peppers or mushrooms as toppings.
