Description

Keto Cauliflower Pizza Bites are a delicious low-carb treat that satisfies your pizza cravings without the carbs.


Ingredients

  • 1 medium head of cauliflower (about 4 cups riced)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pizza sauce (sugar-free)
  • 1/2 cup sliced pepperoni (optional)
  • 1/4 cup chopped fresh basil (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Remove the leaves and stem from the cauliflower, then cut it into florets. Using a food processor, pulse the florets until they resemble rice (about 4 cups).
  3. Transfer the riced cauliflower to a microwave-safe bowl and microwave on high for 5-6 minutes, until softened. Let it cool for a few minutes.
  4. Once cooled, place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a large mixing bowl, combine the riced cauliflower, mozzarella cheese, Parmesan cheese, eggs, garlic powder, oregano, salt, and pepper. Mix until well combined.
  6. Scoop about 2 tablespoons of the mixture and form into small bite-sized rounds, placing them on the prepared baking sheet.
  7. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
  8. Remove from the oven and top each bite with a spoonful of pizza sauce and a slice of pepperoni, if using. Return to the oven for an additional 5 minutes to heat the toppings.
  9. Garnish with fresh basil if desired and serve warm.
