Ingredients

  • 2 cups cauliflower rice (fresh or frozen)
  • 1 tablespoon coconut oil
  • 2 large eggs, beaten
  • 1 cup mixed vegetables (such as bell peppers, peas, and carrots)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce or coconut aminos
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. If using fresh cauliflower, chop it into florets and pulse in a food processor until it resembles rice. If using frozen, thaw and drain any excess moisture.
  2. Heat coconut oil in a large skillet or wok over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Push the garlic to one side of the skillet and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them with the garlic.
  4. Add the mixed vegetables to the skillet and cook for about 3-4 minutes until they are tender.
  5. Stir in the cauliflower rice and cook for another 5-7 minutes, stirring frequently, until the cauliflower is tender.
  6. Add soy sauce or coconut aminos, sesame oil, salt, and pepper. Mix well and cook for an additional 2 minutes.
  7. Remove from heat and stir in the chopped green onions before serving.

Notes

  • For added protein, consider adding cooked chicken, shrimp, or tofu to the fried rice.
  • Experiment with different vegetables like zucchini, broccoli, or spinach for variety.
