- 2 cups cauliflower rice (fresh or frozen)
- 1 tablespoon coconut oil
- 2 large eggs, beaten
- 1 cup mixed vegetables (such as bell peppers, peas, and carrots)
- 3 green onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce or coconut aminos
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- If using fresh cauliflower, chop it into florets and pulse in a food processor until it resembles rice. If using frozen, thaw and drain any excess moisture.
- Heat coconut oil in a large skillet or wok over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Push the garlic to one side of the skillet and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them with the garlic.
- Add the mixed vegetables to the skillet and cook for about 3-4 minutes until they are tender.
- Stir in the cauliflower rice and cook for another 5-7 minutes, stirring frequently, until the cauliflower is tender.
- Add soy sauce or coconut aminos, sesame oil, salt, and pepper. Mix well and cook for an additional 2 minutes.
- Remove from heat and stir in the chopped green onions before serving.
Notes
- For added protein, consider adding cooked chicken, shrimp, or tofu to the fried rice.
- Experiment with different vegetables like zucchini, broccoli, or spinach for variety.
- Serve with pork rinds or cucumber slices for a crunchy side.
