- 2 cups almond flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1/2 cup cooked and crumbled Italian sausage (or pepperoni)
- 1/2 cup chopped bell peppers
- 1/4 cup grated Parmesan cheese
- 1/4 cup marinara sauce (for dipping)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, baking powder, garlic powder, Italian seasoning, and salt. Mix well.
- In a separate bowl, whisk together the eggs. Add the eggs to the dry ingredients and mix until a dough forms.
- Microwave the mozzarella cheese for about 30 seconds until melted. Stir it into the dough until fully combined.
- Divide the dough into two equal portions and place each on the prepared baking sheet. Use your hands or a rolling pin to flatten each portion into a circle about 1/4 inch thick.
- On one half of each circle, spread a layer of ricotta cheese, then top with cooked sausage, bell peppers, and a sprinkle of Parmesan cheese.
- Fold the other half of the dough over the filling to create a calzone shape. Press the edges together to seal, and use a fork to crimp the edges for a decorative touch.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Allow to cool for a few minutes before serving. Serve with marinara sauce for dipping.
Notes
- For a vegetarian option, substitute the sausage with sautéed mushrooms or spinach.
- Add extra spices or crushed red pepper flakes to the filling for a spicy kick.
