A delicious low-carb calzone recipe perfect for those following a keto diet.


Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1/2 cup cooked and crumbled Italian sausage (or pepperoni)
  • 1/2 cup chopped bell peppers
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup marinara sauce (for dipping)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, baking powder, garlic powder, Italian seasoning, and salt. Mix well.
  3. In a separate bowl, whisk together the eggs. Add the eggs to the dry ingredients and mix until a dough forms.
  4. Microwave the mozzarella cheese for about 30 seconds until melted. Stir it into the dough until fully combined.
  5. Divide the dough into two equal portions and place each on the prepared baking sheet. Use your hands or a rolling pin to flatten each portion into a circle about 1/4 inch thick.
  6. On one half of each circle, spread a layer of ricotta cheese, then top with cooked sausage, bell peppers, and a sprinkle of Parmesan cheese.
  7. Fold the other half of the dough over the filling to create a calzone shape. Press the edges together to seal, and use a fork to crimp the edges for a decorative touch.
  8. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  9. Allow to cool for a few minutes before serving. Serve with marinara sauce for dipping.
