Description
Savory Keto Chicken Meatballs in Creamy Tomato Sauce
Ingredients
Scale
- 1 pound ground chicken
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 teaspoons garlic powder
- 2 teaspoons ground ginger
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh cilantro (for garnish)
- 1/4 cup unsalted butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1 can (14 ounces) crushed tomatoes
- 1 cup heavy cream
- 1 teaspoon garam masala
- 1 teaspoon cayenne pepper (to taste)
- Salt to taste
Instructions
- Begin by heating your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine the ground chicken, almond flour, Parmesan cheese, egg, garlic powder, ground ginger, cumin, smoked paprika, turmeric, sea salt, and black pepper. Blend the ingredients thoroughly until a uniform mixture forms.
- Shape the mixture into meatballs, each about the size of a golf ball, and arrange them on the lined baking sheet.
- Bake the meatballs for 20-25 minutes, or until they are fully cooked and have a nice golden hue.
- Meanwhile, prepare the sauce by melting the butter in a large skillet over medium heat. Add the diced onion and sauté until it becomes soft and translucent, roughly 5 minutes.
- Incorporate the minced garlic and grated ginger into the skillet, cooking for an additional 1-2 minutes until aromatic.
- Pour in the crushed tomatoes, heavy cream, garam masala, cayenne pepper, and salt. Let the mixture simmer for about 10 minutes, stirring occasionally to blend the flavors.
- Once the meatballs are ready, carefully transfer them into the sauce and allow them to simmer together for another 5 minutes, letting the meatballs soak up the rich flavors.
- Serve the dish warm, garnished with a sprinkle of fresh cilantro for a burst of color and flavor.
Notes
- For an extra zing, add a squeeze of lime juice to the sauce just before serving.
- Feel free to swap the ground chicken with ground turkey or beef to suit your taste preferences.
