Description

Savory Keto Chicken Meatballs in Creamy Tomato Sauce

Ingredients

Scale
  • 1 pound ground chicken
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 teaspoons garlic powder
  • 2 teaspoons ground ginger
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh cilantro (for garnish)
  • 1/4 cup unsalted butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup heavy cream
  • 1 teaspoon garam masala
  • 1 teaspoon cayenne pepper (to taste)
  • Salt to taste

Instructions

  1. Begin by heating your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine the ground chicken, almond flour, Parmesan cheese, egg, garlic powder, ground ginger, cumin, smoked paprika, turmeric, sea salt, and black pepper. Blend the ingredients thoroughly until a uniform mixture forms.
  3. Shape the mixture into meatballs, each about the size of a golf ball, and arrange them on the lined baking sheet.
  4. Bake the meatballs for 20-25 minutes, or until they are fully cooked and have a nice golden hue.
  5. Meanwhile, prepare the sauce by melting the butter in a large skillet over medium heat. Add the diced onion and sauté until it becomes soft and translucent, roughly 5 minutes.
  6. Incorporate the minced garlic and grated ginger into the skillet, cooking for an additional 1-2 minutes until aromatic.
  7. Pour in the crushed tomatoes, heavy cream, garam masala, cayenne pepper, and salt. Let the mixture simmer for about 10 minutes, stirring occasionally to blend the flavors.
  8. Once the meatballs are ready, carefully transfer them into the sauce and allow them to simmer together for another 5 minutes, letting the meatballs soak up the rich flavors.
  9. Serve the dish warm, garnished with a sprinkle of fresh cilantro for a burst of color and flavor.

Notes

  • For an extra zing, add a squeeze of lime juice to the sauce just before serving.
  • Feel free to swap the ground chicken with ground turkey or beef to suit your taste preferences.
