- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup cooked and crumbled breakfast sausage or diced ham
- 1/4 cup chopped bell peppers (optional)
- 1/4 cup chopped onions (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well.
- Add melted butter and eggs to the dry ingredients. Stir until a dough forms.
- Fold in shredded cheese, cooked sausage or ham, bell peppers, onions, garlic powder, and onion powder until evenly distributed.
- Divide the dough into 4 equal portions. Roll each portion into a ball and then flatten it into a rectangle about 1/4 inch thick.
- Place a generous amount of filling (about 1/4 cup) in the center of each rectangle.
- Fold the dough over the filling to create a pocket and pinch the edges to seal.
- Place the hot pockets on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Allow to cool slightly before serving.
Notes
- For a vegetarian option, substitute the meat with sautéed mushrooms and spinach.
- Experiment with different cheeses like pepper jack for a spicy kick or feta for a Mediterranean twist.
