Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked and crumbled breakfast sausage or diced ham
  • 1/4 cup chopped bell peppers (optional)
  • 1/4 cup chopped onions (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, coconut flour, baking powder, and salt. Mix well.
  3. Add melted butter and eggs to the dry ingredients. Stir until a dough forms.
  4. Fold in shredded cheese, cooked sausage or ham, bell peppers, onions, garlic powder, and onion powder until evenly distributed.
  5. Divide the dough into 4 equal portions. Roll each portion into a ball and then flatten it into a rectangle about 1/4 inch thick.
  6. Place a generous amount of filling (about 1/4 cup) in the center of each rectangle.
  7. Fold the dough over the filling to create a pocket and pinch the edges to seal.
  8. Place the hot pockets on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
  9. Allow to cool slightly before serving.
